Whats the best way to override bootstrap colors? Ex: I want a background color of #5C905C.

Should I just add a stylesheet and mark every css override with !important?

make a new stylesheet.css , link to it BELOW your bootstrap link ( cdn or local ) , inspect the element you want to change the styles of in the browser , and then select it in your stylesheet and customize it as you wish.
