When I inspect the header as shown in the video, I don't see the numbers inside the box itself. it's empty.

I can play with the numbers above by changing the values but I'm wondering why I can't do it from inside the box. just curious. thanks in advance!

It may depend on the browser you are using, and/or any inspector tool options it comes with! Might be a case of searching how to add them in for your particular browser.
