Where does UILabel live?

Why do we have to add a reference to the UILabel if it exists within the View Controller? If it does, couldn't we just access it without an outlet? Or, does UILabel exist elsewhere in code?

So there is no confusion between multiple UILabels. Without the reference to each UILabel, the controller would not know which UILabel you would want.
