Why do Mailchimp templates include styles in the header file? In fact a lot of styles in the header file?

Templates written for mailchimp that I have downloaded from paid sites all have the same styles and mcn classes in the header.

Is this inlined when the email is sent?

So how do I create a universal email that Mailchimp and other email clients can read (and especially look good in Outlook 2007?

Yes, MailChimp automatically inlines all css styles when sending the email. mcn classes are not needed for MailChimp to read the template. You can definitely simplify any exported mailchimp template an cut several layers of nested tables to make it easier to work with in the code. I suggest creating a few boilerplates from mailchimp templates and other tutorials from the web combined.
