What is the best laptop for someone who is an IT graduate student, full-stack developer, and interested in AI/ML?

Hello, friends! I'm in the market for a new laptop and could use any tips and recommendations you can offer.

I've been a MacBook Pro user for the past 15 years. For the most part, I'm extremely satisfied with Mac. However, I am open to switching over to a high-specs PC laptop if it makes sense.

I am a graduate student in computer science/IT, a full-stack developer, and am interested in machine learning and AI. If possible, I would like to specialize in AI/ML and pursue jobs in that domain.

I will be using the laptop primarily for full-stack web development, taking online courses, writing long research papers, and doing some ML/AI.

I'm mostly deciding if I should shell out $1000-$2000 more for a high-end MacBook Pro or if I should get a mid-range gaming laptop with a good CPU/GPU and upgrade the RAM/storage. I know from experience that Macs run seamlessly and last a long time, but a high-specs PCs may have better performance.
