Custom api and architecture design?

I watched the entire android series and am looking to answer these two questions:

  1. the ribbit application entirely went smooth because the parseObject java classes had all the internet callback all implemented behind the scenes. How do you code the same thing without some java library using custom api callbacks.

  2. How do you practice oop design practices and thinking in objcts for android? XML seems the easiest and click-based fuctions make sense but how would you design other stuff?
