Difference between concatenation and string interpolation?

So the syntax differences between concatenation and string interpolation are clear enough - but they seem to give me the same result. However, I assume there are instances where you would want to use one over the other. Why else would they both exist, right?

Can someone give me an example of where I would use one rather than the other? Trying to get these features straight in my head. Thank you. :)
