Do I need webpack to use React and Redux or can I use Redux with create-react-app?

Do I need to learn webpack to learn from this course?

Strickly speaking for learning React and Redux, no, you can use Create React App and add Redux as a dependency.

However it's a good thing to learn about webpack since it is the packager of choice for web apps, even beyond React. And you may find yourself wanting to change the defaults a bit.
