Do we ever get into detail for Delegation/Custom Delegation & Blocks in any of the iOS Objective-C tracks?

I think those are incredibly important topics that contribute to MVC, I was wondering if treehouse really gets into detail for it for those who are learning or those who need a refresher.

As far as I remember they do talk about it in the Objective-C track.

Dang. They killed it. They used to have an iOS - 6 maybe? - in-depth class taught by Amit that went into a lot of detail on blocks and delegation. If you're looking for something super deep I would recommend watching the WWDC videos on those topics. They're super informative.
