Empty string?

In the "Storing guesses" video in the java objects course, Craig Dennis very briefly mentioned 'empty strings.' He did not expound upon this, and I would like to know what they are, and why they are used. Example:

mHits = "";
mMisses = "";

Usually you use empty strings in local variables; these are variables within methods. When they are instance variables you only need to declare them. When you declare them inside of methods they usually want something being stored in there so these: "" usually suffice until you are able to put real data in there.
