Hey guys,
I'm just about to start my 'Random Quote Generator' project.
I have downloaded all the files and set up my github account...
What do I do now? Where am I supposed to be doing this, in workspaces?
I have downloaded Sublime Text Editor and have currently opened up all the files in that.
How do I preview the page and test that what I've written works? How do I debug my code?

Sounds like you're at a great starting point, Working on your code in workspaces is always nice, and Sublime is a great program, I have recently changed over to a program called Atom which is continually being updated ( one thing I felt sublime lacked)
As for testing, I'd suggest once you get a folder with your files together, open the file using your browser, ie chrome, and you can test within the browser using chrome's dev tools.. I know I've taken at least two dev tool courses, one being on treehouse.. I'll reply with links if I can find them. Using the dev tools allows you to troubleshoot and look at your code inside the browser and make adjustments as needed which is extremely helpful.

Good start! You can preview and debug in Chrome using the dev tools there. Sublime's pretty good but I'll also go along and suggest atom which is definitely hackable/customizable for whatever you need.
Probably sounds like repeat advice, but it's good advice nonetheless! :D
