I'm lost here. Here's another version I tried.

SELECT first_name ||" "|| last_name ||" <"|| email ||">"|| AS to_field FROM patrons;

Hey my Friend try this. :D

SELECT first_name ||' '|| last_name || ' <'||email||'>' AS "to_field" FROM patrons;

Change the double quotes to single and remove the last || before the 'AS'
