When you take a look at the app store, you'll notice that most of the games are created by companies and they dominate the market. My question here would be, How can I remain only a developer and still make top of the line iPhone Games? i mean, I'm aware of the flappy bird phenomena but as far as having my own characters and etc.. would you just say I would just have to learn to use photoshop or something?

9,052 PointsLook for existing iOS libraries which will help you create games on the platform. The art is still up to you, but there are many ways to make the technical parts easier. If you want to create 2D games (platformers, 8bit style, etc) then here are some resources to check out:
Also Unreal Development Kit is similar to Unity3D, and supports multiple platforms.
