Is it ok to keep the callback functions outside the ready function?

Is there some reason to keep the callback functions(displayPhotos in this case) inside the ready function?

Well, you can declare it outside of the ready function and it will still work but it has to be "visible" from the ready function. If it is used only in that function you spare some useless memory allocation for that function declaring it only when you need it.

As long as its scope is visible to the jQuery ready function call, it should still work.
