Should the other box-sizing: border-box selectors be deleted after entering a universal selector?

I wanted to know if it's good practice to avoid too many lines of unnecessary code by deleting individual selectors once a universal one has been applied.

Yes, because the box-sizing is now defined universally.

Yes, you should be fine removing it from other places in your css, to keep your code DRY.
