What are the best option for keyboards and mice for long hours of typing?

Currently I am using an apple wireless keyboard, and a terrible old microsoft mouse. I would love to upgrade to a better mouse and even a better keyboard if there is one out there. I am currently enjoying the apple keyboard, but I could be swayed. As for the mouse. That needs to change, and soon.

What do you guys use, like, or recommend?

For the keyboard your best bet is to go mechanical. This specifically would be a good choice. I would go for MX Blue Switches but you can search around a bit and find what would work best for you. You can also get a switch tester to try out the different switches and see first hand which one you like best.

As for the mouse, I find it doesn't matter as much. If you really want to get rid of your old one, by all means. There is one important aspect here, though. Get a pad! Really.

I agree with mechanical switches. I've got my eye on this one http://codekeyboards.com/. I really like how they offer backlight keys. I'm use to that feature, and I prefer to work with low, soft lighting, so at this point backlight keyboard are a must. Until I actually do buy it, I did buy Dell keyboard that has mechanical switches on it from a local thrift store for a whopping $3. Keyboard looked like new. I'm using that for the time being.

I have both a C0DE keyboard (here at work) and a Das Keyboard at home. Both are good, solid keyboards. I think I'd pick the C0DE (or any other WASD keyboard) over the Das, though, if I was buying all over again. Smaller form factor and slightly clickier switches (green vs blue) makes it a bit nicer to use.

As for mice, I use an Apple magic trackpad, but suggest using the mouse as little as possible anyway :)

Unfortunately, C0DE Keyboards are not available outside of the US at the moment.

I have looked at the Das and the C0DE keyboard as well. Both seem to be top of the line.

I think the the magic trackpad would be my best bet. I only started using the mouse because I now put my laptop on a stand. I definitely miss the swiping gestures of the track pad and find myself using it often.

Get yourself a tiling window manager and something that'll move windows around with keyboard shortcuts. :)
