The statement "To make changes to the original layers, simply double click the smart object and it will open a new document window. Make your changes, save the document, and close it out, and your changes will be reflected in all instances of that smart object."

What this is talking about is if you have multiple copies of the smart object you just edited in your document every one of them will be updated with the changes you've made.

I see, thanks and does this apply to programming games in Xcode with Objective-C but obviously with code instead of smart objects and images ?

If you think of it in the broadest terms than yes. An instance or object is a piece of reusable code.
