When I drop down the 'Template' choices, I have very odd options: 'Full Width Page' and 'Contributor Page'

I expect to see Left Sidebar as a template option.

Where did those other options come from ?

Those options should be coming from other files in the WordPress theme that is activated.

Yes. I had to re-activate my own theme where the sidebar code lives.
