Why can't I put randomColor() color value in one line as such:

function randomColor() {
var color = 'rgb(' + randomRGB()  +  ' , '  + randomRGB() +  ' , '  + randomRGB() + ')';
return color;
}

As long as randomRGB() is a function that returns a single integer ranging from 0-255, this should work.

You could even just return the string in one line without assigning it to a scoped variable:

function randomColor() {
  return 'rgb(' + randomRGB()  +  ' , '  + randomRGB() +  ' , '  + randomRGB() + ')';
}
