Woocommerce - Adding tags or categories to individual variations

In my store I am working on, I have products that are similar and have decided to go with variations. I have it all setup and have setup a way for individual variations to show on the shop page. This is great, but has caused my shop to go from 32 products to 600. I am trying to find a good way to filter them but have a problem because all the individual variations simply inherit their taxonomies from their parent product. I am trying to find a way to add tags or categories to just one variation.
